Just take 2-4 eggs and blend with the veggies you want, then scramble it all up as you would cooking regular scrambled eggs.
I recommend free-range eggs. Free-range is far superior to regular eggs because the chickens get to eat buggs/grains/etc rather than just getting fed corn, and thus their eggs contain way more nutrients, especially Omega-3 and Omega-6 fatty acids. They are more expensive, but if you eat 1-2 dozen eggs per week the actual cost is only $1-3 more per week. That’s well worth it. The eggs taste way beter too.
